Instructions
In a saucepan, heat the sugar over medium heat, stirring constantly until it melts into an amber-colored liquid.
Carefully add the room temperature heavy cream while continuing to stir. The mixture will bubble up. Stir until smooth.
Add the butter cubes and vanilla extract, mixing until fully incorporated. Let the caramel cool slightly.
Melt the chocolate chips using a double boiler or in the microwave in short intervals, stirring frequently until smooth.
On a parchment-lined baking sheet, spoon small rounds of melted chocolate. Top each with a dollop of caramel and sprinkle with sea salt if desired.
