Dolly Parton's Butterscotch Pie is a rich, creamy dessert featuring a sweet butterscotch filling in a buttery crust. This Southern classic is easy to make and perfect for any occasion.
Place the pre-made pie crust into a pie dish and bake for about 10 minutes, or until golden brown. Let it cool completely.
In a saucepan, melt 1/2 cup butter over medium heat.
Add brown sugar, flour, and salt. Stir continuously to create a smooth mixture.
Slowly whisk in whole milk, stirring constantly to avoid lumps. Cook until thickened (5-7 minutes).
In a separate bowl, whisk the egg yolks. Gradually add a small amount of the hot mixture to temper the eggs, then slowly pour the egg mixture back into the saucepan.
Cook for another 2-3 minutes, stirring continuously until thickened.
Remove from heat and stir in vanilla extract.
Pour the butterscotch filling into the cooled pie crust and smooth the top.
Refrigerate for at least 4 hours (or overnight) to set.
