Instructions
 

  • Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  • Arrange frozen burritos in a single layer in the baking dish.
  • Pour the enchilada sauce evenly over the burritos, making sure they are well coated.
  • Sprinkle black beans and diced tomatoes over the burritos for extra flavor.
  • Generously top with shredded cheese.
  • Cover the dish with foil and bake for 30 minutes.
  • Remove foil, add more cheese on top, and bake uncovered for another 10 minutes until cheese is golden and bubbly.
  • For a crispier topping, broil for 2-3 minutes.
  • Let the casserole cool for 5 minutes before serving.
  • Garnish with sour cream, jalapeños, cilantro, and green onions. Serve with tortilla chips for crunch.

Notes
