Ingredients

  • 2 lbs potatoes Yukon Gold or Russet, peeled and cubed
  • 1 cup Hellmann's mayonnaise
  • 2 tbsp white vinegar
  • 1 tbsp mustard optional, for extra tang
  • 1 cup chopped celery
  • 1/2 cup diced onions
  • 2 hard-boiled eggs chopped
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions
 

  • Peel and cube the potatoes. Place them in a pot of salted water and bring to a boil. Cook until tender but not mushy, about 10-15 minutes. Drain and let cool.
  • In a large mixing bowl, combine Hellmann's mayonnaise, white vinegar, mustard (if using), salt, and pepper.
  • Add the cooled potatoes to the dressing. Gently stir to coat evenly.
  • Mix in the chopped celery, diced onions, and chopped hard-boiled eggs.
  • Cover and refrigerate for at least an hour to allow the flavors to meld together.
  • Garnish with fresh parsley before serving (optional). Serve chilled.

Notes

For extra flavor, add sweet pickle relish, chopped dill pickles, or crumbled bacon. The salad tastes even better the next day as the flavors meld.
