Ingredients
  

Glaze Base

  • 1 cup maple syrup preferably Grade A dark or amber
  • 1/2 cup bourbon smooth, mid-range quality
  • 1/4 cup brown sugar light or dark
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • a pinch salt

Optional Add-ins

  • 1/4 tsp cayenne pepper for a spicy kick
  • 1/2 tsp smoked paprika for added smoky flavor

Instructions
 

  • In a saucepan, mix maple syrup, bourbon, brown sugar, apple cider vinegar, Dijon mustard, and salt.
  • Cook over medium heat, stirring occasionally, until the mixture thickens, about 15 minutes.
  • For a spicier or smokier flavor, add cayenne pepper or smoked paprika and stir well.
  • Remove from heat and let cool slightly. The glaze will continue to thicken as it cools.
  • Use immediately on meats, vegetables, or desserts, or store for later use.

Notes

For a thicker glaze, simmer longer. If too thick, add a splash of water or bourbon to adjust consistency.
