preferably Grade A dark or amber

bourbon
smooth, mid-range quality

brown sugar
light or dark

Instructions
In a saucepan, mix maple syrup, bourbon, brown sugar, apple cider vinegar, Dijon mustard, and salt.
Cook over medium heat, stirring occasionally, until the mixture thickens, about 15 minutes.
For a spicier or smokier flavor, add cayenne pepper or smoked paprika and stir well.
Remove from heat and let cool slightly. The glaze will continue to thicken as it cools.
Use immediately on meats, vegetables, or desserts, or store for later use.
Notes
For a thicker glaze, simmer longer. If too thick, add a splash of water or bourbon to adjust consistency.
