These Pistachio Dream Cookie Bars are a nutty, buttery dessert with a rich cookie base, luscious condensed milk topping, and a generous sprinkle of pistachios. They’re easy to bake and even easier to love!
Preheat oven to 350°F (175°C) and line a 9×13-inch pan with parchment paper, leaving overhang for easy removal.
Cream together softened butter and brown sugar until fluffy. Mix in vanilla and salt. Gradually add flour and mix until dough forms.
Press dough evenly into the prepared pan. Smooth with hands or spoon to form the base layer.
Sprinkle chopped pistachios over the base. Drizzle evenly with sweetened condensed milk. Add white chocolate chips if using.
Bake for 25–30 minutes until edges are golden and the top is gently bubbling. Cool completely in pan before slicing.
Lift using parchment and cut into bars. Chill before slicing for cleaner edges if desired.
